A new frontier for frozen vegetables 🍦

When it comes to eating your vegetables, Salt & Straw may have figured out the best way — in ice cream, of course.  


Starting today, fans can sink their teeth into August’s five flavors of the month — “Veggies You Crave” – in scoops, pints, or milkshakes at any location. So grab a spoon, and get ready to savor summer’s bounty.

🍫 Spinach Cake with Chocolate Tahini Fudge

Much like when Popeye inhales a can of invigorating greens, this tasty Turkish-inspired treat punches above what you expect. Pureed spinach batter is baked into fluffy pieces, slathered in frosting, and mixed into vanilla ice cream alongside rich, housemade fudge bites. Ah guh guh guh guh.

 

🍁 Green Fennel + Maple

The entire fennel plant, from bulb to frond, is incorporated in this complex creation. Juiced leaves, steeped in pollen + syrup, tantalize the palate, while aromatic black licorice and herbs bring you back for more.

🥕 Carrot Cake Batter with Pralined Hazelnuts

Decadent, slow-roasted carrots and molasses come together for this classic, crowd-pleasing combination that ends with a crunch. You’d be hopping mad to not give this recipe a try. 

 

🌽 Charred Corn Curd, Cotija + Tajin

Somehow, they’ve distilled elotes and summer nights around the grill into a cone-worthy confection, crafted with housemade mayo ice cream. You’re in store for some toasted sweetness and salty cotija cheese.

 

🌶️ Red Chili Curry & Makrut Lime Crispy Rice

You thought it was hot outside? Wait ‘til you take a bite of this swelteringly smooth (and vegan) concoction. Southeast Asian spices turn up the temp, but lemongrass and coconut cream bring it back down for a satisfying contrast with a vibrant pop of citrus.

  • Black families in Portland can now apply for the Black Resilience Fund’s inaugural basic income program, which will provide 50 households with up to $2,000 in monthly stipends for three years. Those interested have until Mon., Aug. 15 to apply. (Portland Business Journal)

  • After unwavering community advocacy from groups like the Portland Harbor Community Coalition + Audubon Society of Portland, the Metro Council unanimously voted to proceed with a full clean up of Willamette Cove. There had been fears that the agency would opt for a cheaper-but-dirtier approach on the 27-acres of land in North Portland. 💧 (Willamette Week)

  • Oregon State University announced this week that enrolled members of the 574 federally recognized tribes are eligible for in-state tuition — no matter where they live. OSU, which offers programs at a satellite campus in Portland, said the policy takes effect starting this fall term.

  • For nomadic workers and their remote gigs, Portland is the place to be — at least according to one online article from Reviews.org. Our city came in as the second-best in the country, scoring high marks in internet speed, outdoor opportunities + short-term rental prices. 💻 (Reviews.org)

  • After months of anticipation, award-winning chef Gregory Gourdet’s Haitian restaurant kann is open for business. The eatery is named after the Haitian Creole word for “sugar cane,” one of its owner’s favorite snacks growing up. Patience is key here — reservations are already booked out months in advance.   • Pacific Crest Pizza Company may be leaving its downtown location at 400 SW Broadway, but diehards of the outdoor-themed pizzeria aren’t exactly lost in the woods — the business is looking for a larger space where it can incorporate elements like fire pits + picnic tables that vibe with its brand. 🍕 (Willamette Week)

Arts

  • Education, activism, and personal stories — those are the three pillars of Julian Gaines’ work. The artist’s latest exhibition, “Under the Flag,” touches on all three themes by exploring our personal relationships with the American flag. Editor’s pick: On Wednesday night, I attended an event hosted by Celtic Axe Throwing at Stickmen Brewing Company’s Tualatin Beer Hall.

 

We got to dig into some wood-fired pizzas and sample a few of the 28 house-brewed beers on tap — oh, and of course we hucked some hatchets at a wood board. Paul Bunyan’s got nothing on me. 🪓
