Ride the regenerative seafood wave with Winter Waters

The second annual series raises awareness about farmed sea vegetables through culinary experiences.

Ready to reel in some regenerative seafood? Next month, chefs and tastemakers across Oregon will spotlight farmed sea vegetables and other local sustainable seafood items during the second annual Winter Waters series.

In Portland, sample specially brewed seaweed beers at Loyal Legion or try a six-course tasting menu at Morchella.

Beyond the Rose City, follow the smell of salty sea air and venture even closer to the source to enjoy additional events along the Oregon Coast.

In 2023, Winter Waters restaurants brought in more than $60,000 in revenue — a boon during the typically slow month of February. The campaign’s nonprofit partner, the Oregon Kelp Alliance, also received $6,000.
