Lardo to honor local chef with sandwich

Sales of November’s Chefwich will benefit The Street Trust

On the morning of Tues., Oct. 4, chef Sarah Pliner , co-founder of Aviary and one of Portland’s most celebrated chefs, was hit and killed by a truck while riding her bicycle.

The impact of this tragedy lingers over the city’s culinary scene, while also bringing fresh scrutiny to transportation safety — now local sandwich shop Lardo is doing its part to drive what it sees as vital and necessary improvements.

Every month, the restaurant puts a new “Chefwich” on the menu designed by a visiting cook. Throughout November, guests can order a duck banh mi , made with Sarah’s own recipe. The crispy duck confit, duck liver mousse, spicy green papaya salad, and Kewpie mayo are mouth-wateringly good.

Lardo wrote in an Instagram post, “We hope, more than anything, that we made her proud. If you’ve had this at Aviary, we invite you to let us know how we did.”

Proceeds from this item will go to The Street Trust , a nonprofit that strives to make Portland’s streets safer for cyclists and pedestrians.
