AC Hotel opens at Vancouver Waterfront

The up-and-coming Vancouver Waterfront just added another jewel to its crown: a brand new AC Hotel featuring an upscale restaurant + panoramic views of the Columbia River.

The hotel, which is under the Marriott umbrella, offers 150 rooms, 11,500 sqft of meeting space, a spa, outdoor patios + more. Construction began two years ago at 333 W. Columbia Way, Vancouver — and the hotel opens today, June 15.

Out-of-town visitors will appreciate the modern finesse + amenities (like a full gym, complete with a punching bag) during their stay. Locals can take advantage of a Mediterranean-inspired dining experience that focuses on seasonal, local ingredients at the AC Lounge, open Sunday-Thursday, 3-11:30 p.m., and Friday + Saturday, 3 p.m.-midnight

We were recently invited to sample the menu and meet executive chef Tanner Poncik-Genk. Here are some quick facts to know before you go.

🍽️ Food 

You’ll find small, tapas-style plates as well as large plates, with signature dishes like grilled salmon and pistachios on soft polenta, and spicy mushroom ragout over risotto with wild mushrooms and olives. Chef Tanner said the kitchen makes about 99% of its dishes from scratch. Pro tip: the melon salad and the loaded bacon cheeseburger are must-trys. 

🍸 Drinks 

Where are the G+T fans at? AC Hotels are known for their two gin and tonics: the Signature and the ACGT, which is served in a custom glass designed to heighten the drink’s taste and aroma. The lounge also pours several local wines + has plans to roll out ~20 custom cocktails over time. 

🪑 Vibe 

The AC Lounge features a mix of marble + wood surfaces, clean, straight lines, and a warm, airy atmosphere. Dress up or down, but casual attire is perfectly fine — especially if you want to sit on the heated, covered outdoor patio. Maybe take advantage of the floor-to-ceiling window views inside if it’s raining sideways, though.
